I’ve always fancied these and this one looks like it has half the Amazon rain forest veneered inside it. My money is on the brake pedal switch mine used to stick all the time. Hope you get the niggles sorted. Health to enjoy!

For the sunroof - same thing. There is relay under the button cover. Take it off, take off the relay, check it, check connectors, check if there is power coming to it. These are pretty simple there.
Faulty headlamp washers might be related to stuck motor in washer bottle. Or just not enough fluid On late V8's headlamp washer is placed higher up so if fluid gets low, it just does not get fluid
